Coconut Butter Fudge – GAPS

These little GAPS fudge bites are tasty and helpful for those that struggle when making the transition to the GAPS diet from a standard western diet.

During that transition time, some children, in particular, can go through a period of really low blood sugar, feel unwell, nausea and sometimes vomit.

This fudge is another take on the coconut and honey drops that Dr. Natasha suggests in her book. The fat mixed with the honey helps to slow the absorption of fructose to avoid a dramatic glucose spike, but also brings it up enough to help minimize the adverse effects of going too low.

I personally have found that these little bites don’t affect my blood sugar negatively or my ketone levels (tested via blood monitor).  They are also a  tasty little treat that satisfies quickly because of the fat content. The high fat content ensures they will be filling so you won’t need much at all.

 

Here is the basic recipe, but don’t stop there. You can add all sorts of things to this recipe to change it up. ie peanut butter, raspberries, cashews, anything that appeals to your family, try it out and have some fun.

Coconut Butter Fudge – GAPS

Ingredients
  • 2 cup desiccated coconut
  • 80grams coconut oil ( I use about 3-4 TBs)
  • 4 tablespoons honey
  • 100 grams melted butter (coconut oil if you’re leaving dairy out)
Instructions
  1. Melt butter either in a thermomix or pan.
  2. Add all other ingredients and mix well.
  3. Pour into a lined container or tray.
  4. Refrigerate until set.
  5. Slice and enjoy.
