Fermented Zucchini Pickles

Another great salad addition.  Dice them up and add them in or serve as a crudite for dips.  Don’t tell them you are being kind to their gut and they will never know!



Fermented Zucchini pickles
  • 500 grams of zucchini – cut into spears
  • 4 cloves of garlic
  • 2 TBS Salt
  • 1 TBS dill seeds
  • 2 tsp Red chilly flakes
  • 1 tsp black pepper corns
  • 1 tsp coriander seeds
  • 1 tsp mustard seeds
  • 2 TBS whey
  1. Add Zucchini to jar
  2. Add all other ingredients
  3. Fill the remainder of the space with filtered water, leaving a head space.
  4. Ferment on the bench for 2 days
  5. Move to cold storage. Will last up to 3-4 weeks
