My GAPS family love this cake, and I like it mostly because it doesn’t contain a heap of nuts, there is coconut flour in the mixture but the majority of the cake is orange and carrot, so it’s great for when we are limiting our nut intake.
I personally have to watch how many nuts I’m having because they tend to make me gain weight when I over consume them, and I’m not someone that needs to be gaining at the moment.
It’s also a perfect recipe for a nut free lunch box, unless your school cuts out coconuts as well. It’s also another one of those great dishes that you can cook and take with you to a social gathering, or have when guests come over and show that the GAPS Diet doesn’t have to be plain and boring, challenging their beliefs.
- 2 medium sized carrots, chopped
- 1 good sized orange, chopped
- 1/2 cup honey
- 1/2 cup coconut flour
- 50 grams butter or coconut oil
- 4 eggs
- 1 teaspoon bicarb soda
- 1 teaspoon Chinese 5 spice
- pinch of salt
- Preheat your oven to 170 C, and grease loaf tin.
- Using a thermomix on speed 9/10 or food processor chop the carrots and orange until very fine
- Add the remaining ingredients, mix well
- Spoon into the prepared pan and level the top.
- Bake for 75 minutes, inserted skewer will come out cleanly, if still “wet” leave for another 10-20 mins.
- Allow cake to cool in pan before gently flipping onto a cooling rack
2 cup desiccated coconut
80 grams coconut oil
4 tablespoons honey
100 grams melted butter
1. Melt Butter in a sauce pan or Thermomix
2. Add all the other ingredients and blend/mix together.
3. Spread over cake.
Call a friend and enjoy together.
