Cauliflower & Cheddar Soup (GAPS)

Many of us have loved cauliflower and cheese over the years.  They make a great team and in my house it’s the dish that is always gone, everyone comes back for seconds. So putting the two together in soup is also tasty way to a feed your family but also get more broth into them. If you looking at this for the GAPS Diet, it falls into the Full GAPS and the intro stages when you are tolerating cheese.

 Ingredients

  • 2 TB of Butter/ghee
  • 2 small onions, finely chopped
  • 2 medium whole cauliflowers – roughly chopped
  • I.5  litre of chicken broth
  • 200 grams of a good quality cheddar cheese, grated.
  • Salt and Pepper to taste.

 

Method

  • Melt butter or ghee in a pot, than add onions and cook gently for 5 minutes.
  • Add cauliflower and stock, bring to the boil, cover and simmer for 20 mins or until cauliflower is soft.
  • Blend with a stick blender (or transfer into a blender/processor) until smooth.
  • While still hot/warm add grated cheddar cheese and stirring though until melted.
  • Season to taste and serve with a spoon of sour cream (optional)
