Chicken and Veggie crustless GAPS Quiche

Ingredients

  • 8 eggs, preferably from pastured hens
  • 1 cup broth
  • 1/2 cup of boiled chopped veggies
  • 1/2 cup chopped poached chicken
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme leaves (or 1/3 tsp dried thyme)
  • 1/4 tsp mineral salt
  • 1/8 tsp freshly ground pepper
  • 2 Tb Lard, for greasing pie plates

Method

  1. Generously grease two muffin plates.
  2. Combine all other ingredients in medium bowl and use a fork to whip it all together.
  3. Pour egg mixture into greased muffin pans.
  4. Bake at 180 C  for 25-30 minutes, until the centre is set and edges are slightly brown
  5. Cool and serve!

 

** Options – when you are tolerating cheese, you can add 1/2 cup of Cheddar to the mixture and 1/2 cup of parmesan on top of the recipe.
