Indian Spiced Carrot & Lentil Soup (GAPS)

When doing a healing diet like GAPS sometimes you can find yourself in a food rut of eating the same thing over and over and sometimes you just need to shake it up and have a change.  Which is both good for providing your body with a range of nutrients and making eating exciting again!.  This soup recipe helps you do just that, along with contributing to give your metabolism a boost with the spices from the curry.

Serves 4

Ingredients

  • 1 tbs of ghee
  • 1 Large brown onion, diced
  • 2 cloves of garlic crushed
  • 2 cm piece of ginger, peeled and grated
  • 1/2 cup of curry paste (recipe here)
  • 1kg carrots, chopped
  • 6 cups of broth
  • 300 grams of dried lentils
  • Homemade Sourcream, or yoghurt.

Method

  1. Using a deep saucepan over a medium heat, add ghee.
  2. Cook onions, garlic and ginger for 5 mins. Add curry paste and cook for another minute.
  3. Add carrot, lentils and broth, bringing to the boil and cooking until lentils and carrots are soft.
  4. Using a stick blender, puree soup until smooth.
  5. Season with salt and pepper to taste.
  6. Serve with sour cream or yoghurt, and sprinkle with cinnamon.
